Italian Wedding Soup

  • 1 bag Tre Bella Organic Turkey Meatballs
  • 1 lb. fresh spinach (or escarole)
  • 2- 3 carrots (sliced round & thin)
  • 12 cups low-sodium chicken broth
  • 2 tablespoons shredded parmesan cheese
  • 1 bag small red roaster potatoes
  • Salt and freshly ground black pepper


  • Peel red roaster potatoes and slice carrots
  • Bring the broth to a boil in a large pot over medium-high heat
  • Add potatoes, carrots and meatballs and simmer on low heat for approx 30 minutes (or until potatoes are cooked through)
  • Add fresh spinach, simmer 2-3 more minutes
  • Season the soup to taste with salt and pepper
  • Ladle the soup into bowls and serve
  • Garnish with shredded parmesan cheese

Makes 1 lasagna for two.
